I’ve been doing Cupcake Monday for many years. I can whip out a simple batch of cupcakes easily enough. But sometimes I want a challenge. Something that’s going to take way too much effort, and is outside of my comfort zone. I almost always make a shortening or butter based frosting – these are ganache, something I’ve never ever made before....

After two long weeks, we’re back! It’s Monday, and I’ve got all new cupcakes. This week: Dense coffee-chocolate cake with wild blackberry chocolate ganache frosting. Yeah, try saying that ten times fast. This was a new cake and frosting recipe that I tried out, so they’re not perfect, but I look forward to writing about the experience to share...

I was walking down the baking isle at my local grocery store, when I came across an interesting box of cupcake mix. It was for Reese’s Peanut Butter & Chocolate. It was on sale so I thought “Hey, why not?”. I mean, it worked for cereal, surely it can work for cupcakes! The first thing I noticed was that even though the box was bigger than a...

I’m sorry to say I was far too tired this weekend to make cupcakes. I went to bed at 8 PM and didn’t wake up until it was time for work… Last week’s peanut butter recipe will be posted tonight.  Please direct any complaints to Becky 😛 ...

The results of the first week of voting are in, and the result is: Chocolate! Plus someone suggested peanut butter, and I liked that idea, so I made chocolate cake with peanutbutter buttercream frosting, topped with a Reese’s peanut butter cup AND filled the inside with Reese’s-flavored filling. As always, the details of these cupcakes will be posted...

Happy 4th of July! Okay, it was two days ago, but I’m still feeling patriotic! This week we have red, white, and blue sugar frosting with a white cake. I’ve never tried this decorating style before, but I think it turned out okay… Like before, I’ll write up a detailed “making of” post to release next Monday. Until then, please vote...

Most weeks, I usually bring in some sort of sugar-based frosting. It’s quick, it’s easy, and it gets the job done. But sometimes I like to bring in something more special – something that’ll make people give in to temptation and abandon their diet. A fruity buttercream is perfect for such occasions, and with raspberries currently in season,...

It’s 2:00 AM and I’ve just finished tomorrow’s today’s cupcakes. So here’s the plan: I’m going to post a teaser pic each week to let you know what’s coming up. Then the following monday, I’ll release a more detailed post with pictures, instructions, etc. So, for the first Cupcake Monday blog post, I present… ...

Hello! Welcome to Cupcake Monday! I’ve been making cupcakes for the office on Mondays for many years now. People have been asking me for pictures for a long time, and some people want to get a sneak peak at next week’s cupcake. So I’m finally giving in and making a website. This is going to be a blog where I post pictures of the cupcakes I make....
